Unless you raise chickens in your backyard, which I don't and I really wish I did, how do you know if your eggs are fresh?  Although store bought eggs now have an expiration date stamped on the cartons, I continue to doubt mass suppliers of our food products.

Once I have picked up my eggs from the supermarket, I like to check to make sure the eggs are close to being as fresh as the date shown on the carton.  This determines whether I need to use the eggs up faster than I first thought.  If the eggs prove to be close to their prime, hard-boiling them or baking up a storm takes care of them quite quickly.  Some say old eggs can be eaten without any ill effects .... others suggest feeding them to the pigs or tossing them.  I believe it comes down to your own personal preference.

In appearance, fresh eggs are rough and chalky whereas old eggs are smooth and shiny.  On the inside, fresh eggs will have a nice, plump yoke and the older ones will have a flat yoke and watery egg-white.

A quick test will also tell the tale.  Fresh eggs will sink and stay horizontal on the bottom of a glass of water while an old egg will float.   

If I decide to hard boil some of my eggs this is how I do it .... my fool proof way to the perfect hard boiled egg!

1.  Place fresh eggs gently in an empty pot.


2.  Fill the pot with enough cold tap water to cover the eggs completely by approximately one inch.  Using hot water will crack the eggs when they are taken from the refrigerator.


3.  Place the pot on the stove and turn heat to medium.  If placed on high heat, the eggs could bounce around and break.


4.  Add just a pinch of salt to the water.  Doing this will ensure the eggs will be easier to peel.
5.  Put on the lid to the pot and bring the water to a good, rolling boil.  Then turn the heat off but leave the covered pot on the burner.



6.  Let the pot sit as is for 10 - 15 minutes.  Do not start the timer until the heat is turned off.  Less than 10 minutes, the eggs will be runny and more than 15 minutes, the eggs will be discolored and could be stinky.


7.  Now check to see if the eggs are hard boiled ..... test one by whirling it on a counter top.  If the egg spins fast, it is hard boiled .... yes, it really does work.  If it spins fast, place the eggs in cold, running tap water or ice water.  This will stop the cooking process and will help to separate the egg from the shell. 



There you have it!  It works for me every single time.  When I peel my egg, I always peel it under cold, running water.  Now I think it's time to make some devilled eggs!

Catching Up

Pin It The last few days have been spent knitting and catching up on a few projects while the rain has been continually. falling. outside.  UGH



BUT at this time of the year I'll take rain over snow any day!

I have been slowly working on this.  I really wanted to finish it while the snow was still blowing but time got away from me as it usually does.



Unfortunately I have an addiction looking through all the patterns on Ralvery and want to start everything!



While I'm almost finished with this project, I am trying to find the 'perfect' buttons that will suit this cowl ... that decision might take me longer than knitting the whole thing!  Any suggestions?  Should I go with brass, silver, or something else?

I've Been Tagged and Saturday's Snaps

I've been tagged!

 
Cath over at Bits 'n Bobs tagged me in a new game going around in blogland!  I am suppose to answer these questions, and then pass it on, so watch out!
1.  Musicals or Plays?  And what are your favorites?

I am embarrassed right off the start!  LOL  I have never been to either except school plays that my son and nephews performed in at Christmas.  So I will have to say plays.

2.  Do you have any 'hidden' talents that have not made it into your blog?

Construction.  We haven't had to construct anything new around the old homestead so I haven't been able to show those so called talents .... but in the past I have laid ceramic tile, wood flooring and built an addition all by myself. 

3.  Are you a reader?  If so, what are you reading right now?

Yes, I am an avid reader!  I love books ... the feel, the smell and the stories.  Currently I am reading 'Saving Fish from Drowning' by Amy Tan.  I read every type of genre.

4.  What is your favorite time of day?

Early mornings .... but my body usually says otherwise.  If I can tear myself out of my comfy bed, I love getting up early and heading outside for a walk just as the sun is coming up but I seem to have the most energy late in the evening.  That is when I accomplish most of my work.

5.  Do you save the selvages from fabric?  Have you ever made anything with them?

I only save the selvages from Debbie Mumm's fabric .... because it is usually stamped 'Made by Debbie Mumm', so I cut off the 'Mumm' and will sew them to some of my creations. 

6.  What is your favorite quilt you've ever made?

I made a quilt for my Mom last year.  It was a smaller one and she keeps it folded at the foot of her bed.  It was the first quilt I sewed totally by hand .... no sewing machine used at all!

7.  What color comes up most often in your quilts?

Pinks and greens.  Green is my favorite color but I love the girly girl color of pink too.

8.  Do you play music while you sew?  What songs get you motivated?

No, I don't play music.  I usually do have the television on in the background though and listen to the crafting channel.

9.  What's the worst injury you've ever suffered?

My back.  I somehow destroyed two discs in my back and they had to be removed.  It was the worst pain I had ever felt.

10.  Do you come from a large family or a small family?

Small family.  There is only my Mom, my brother and I.  My Mom had 6 brothers and sisters so I have a large extended family.

11.  Have you always lived in your current hometown?  If not, how far away do you live from the town where you were born?

I never lived in my birth town.  My Mom just happened to be visiting her sister when I made my appearance .... but I did live in my hometown for my whole life except for 4 years.  I currently live 150 miles from my hometown but hoping to move back soon.

This was a lot of fun!  Thanks Cath for including me in the game.  I really am enjoying reading everyone's answers.

 My heart aches for our Lord's suffering yet at the same time I am thankful for His sacrifice on the cross for me.
