Picking from the Garden

Pin It Tricky title but so true!  Yes, yesterday I harvested chives from the garden for dinner.  Mind you they weren't very big yet ... but what do you expect in March?

I am just LOVING this weather!  My potato salad is my Mom's very bestest recipe.  Simple but oh so delicious.  I never measure anything so here is a rough explanation if you wish to try it.

Mom's Bestest Potato Salad

5 or 6 russet potatoes - peeled, cooked until slightly firm, cooled and cut into cubes
5 hard boiled eggs - peeled, cooled and cut into cubes
fresh chives or spring onions - chopped
Miracle Whip - enough to coat

Mix all ingredients, adding just enough Miracle Whip to coat all ingredients.  Chill in refrigerator for an hour for all flavors to mix well.

Serve.


I always have to make a large batch since it doesn't last long around here!

  2. Oh, that looks so good! Our chives did not survive the winter...or those pesky wabbits got them. More going in next week
